INGREDIENTS
5 oz Turkey Breast
1 small Sweet Potato
2 cups Baby Spinach
1 tsp Extra Virgin Olive Oil
Pinch each of Salt, Black Pepper, Dried Rosemary, Dried Thyme, and Garlic Powder
PREPARATION
Preheat your oven to 400°F.
Cube the sweet potato into bite-sized pieces and toss with a pinch of salt, pepper, dried rosemary, dried thyme, and garlic powder, along with half of the olive oil.
Spread the seasoned sweet potato on a baking sheet and roast in the oven for about 25-30 minutes until tender and slightly caramelized.
While the sweet potato roasts, season the turkey breast with salt, pepper, rosemary, thyme, and garlic powder.
In a hot skillet, add the remaining olive oil over medium-high heat and sear the turkey breast for about 4-5 minutes per side until fully cooked and lightly browned.
Allow the turkey to rest for a few minutes before slicing it into strips or bite-sized chunks.
In a bowl, layer the baby spinach as the base, top with the roasted sweet potato, and arranged sliced turkey breast on top.
Drizzle with any remaining pan juices if desired and serve immediately.
