INGREDIENTS
3.5 oz Chicken Breast (100g)
2 cups Cremini Mushrooms (144g)
2 Garlic Cloves
1 Tbsp Unsalted Butter
1 tsp Olive Oil
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
Salt & Black Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Pat the chicken breast dry and season lightly with salt and pepper. In a skillet, heat the olive oil over medium-high heat and sear the chicken breast for 2-3 minutes per side until golden brown. Transfer the chicken to the oven to finish cooking for about 10-12 minutes or until it reaches an internal temperature of 165°F. Once done, let it rest and slice into strips.
While the chicken is finishing, clean the mushrooms with a damp cloth and slice them if desired. Mince the garlic cloves.
In the same skillet used for the chicken, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds.
Add the cremini mushrooms to the skillet along with the fresh rosemary and thyme sprigs. Toss well to ensure the mushrooms are evenly coated in the garlic butter. Roast the mushrooms in the skillet over medium heat for about 5-7 minutes until they are tender and lightly caramelized.
Season the mushrooms with additional salt and pepper if needed. Arrange the roasted mushrooms on a plate and top with the sliced chicken breast.
Serve immediately while warm and enjoy your protein-packed, herb-infused meal.
