INGREDIENTS
5 ounces Sirloin Steak
1 medium Yukon Gold Potato
1 teaspoon Olive Oil
1 Garlic Clove
1 teaspoon Fresh Thyme
1 teaspoon Fresh Rosemary
Salt and Black Pepper to taste
PREPARATION
Pat the sirloin steak dry and season both sides generously with salt, pepper, fresh thyme, and rosemary.
Heat a skillet over medium-high heat and add the olive oil once hot.
Place the steak in the pan and sear for about 3-4 minutes per side for medium-rare, or adjust to your desired doneness. Remove the steak from the pan and let it rest.
Meanwhile, place the Yukon Gold potato in a pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.
Drain the potato and while still warm, gently smash it with the back of a fork. In a small pan, heat a little olive oil and sauté the minced garlic for about 30 seconds. Drizzle the garlic oil over the smashed potato and season with a pinch of salt and pepper.
Plate the sliced steak alongside the garlic smashed potatoes and serve immediately.
