INGREDIENTS
300 grams Firm Tofu
75 grams Shelled Edamame, cooked
100 grams Red Bell Pepper
100 grams Broccoli Florets
1 tablespoon Sesame Seeds (approx. 9g)
1 tablespoon Cornstarch (approx. 8g)
1 tablespoon Light Soy Sauce
1 teaspoon Sesame Oil
2 cloves Garlic
1 teaspoon Fresh Ginger
1 teaspoon Maple Syrup
PREPARATION
Drain and press the tofu to remove excess water, then cut it into bite-sized cubes.
In a bowl, toss the tofu cubes with cornstarch until evenly coated.
Heat the sesame oil in a non-stick skillet or wok over medium-high heat. Add the tofu cubes and fry until all sides are golden and crispy. Remove tofu and set aside.
In the same pan, add minced garlic and grated ginger. Sauté briefly until fragrant.
Add the red bell pepper and broccoli florets, stir-frying for 2-3 minutes until they start to soften yet remain crisp.
Stir in the shelled edamame and return the crispy tofu to the pan.
Mix in the light soy sauce and maple syrup, coating all ingredients well. Allow the flavors to meld for a minute.
Finish by sprinkling toasted sesame seeds over the stir-fry and toss gently before serving.
