200g Cauliflower Rice
0.5 cup Kimchi
150g Firm Tofu
0.5 cup Shelled Edamame
1 large Egg
1 tsp Sesame Oil
1 tbsp Soy Sauce
1 clove Garlic
2 tbsp Green Onions
1 tsp Sesame Seeds
PREPARATION
Heat the sesame oil in a large non-stick skillet over medium-high heat.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the firm tofu, pressed and cut into cubes, and stir-fry until lightly golden on all sides.
Stir in the cauliflower rice, allowing it to crisp up for 3-4 minutes.
Mix in the shelled edamame and kimchi, and continue to stir-fry for another 2 minutes.
Push the stir-fry to the side of the pan and crack the egg into the space. Scramble the egg until fully cooked, then mix it into the rest of the ingredients.
Add soy sauce and green onions, stirring well to combine.
