INGREDIENTS
220g Extra Firm Tofu
50g Dry Rice Noodles
1 tbsp Peanut Butter
1 tbsp Fresh Ginger, minced
1 clove Garlic, minced
1/2 medium Red Bell Pepper, sliced
1 small Carrot, julienned
2 tbsp Green Onion, chopped
1 tbsp Low Sodium Soy Sauce
1 tbsp Fresh Lime Juice
1/4 tsp Olive Oil
1 tsp Toasted Sesame Seeds
Pinch of Red Chili Flakes
PREPARATION
Press the tofu gently to remove excess moisture, then cut it into bite-sized cubes.
Cook the rice noodles according to the package instructions. Drain and set aside.
Heat a non-stick skillet over medium-high heat and add the tofu cubes. Sauté until all sides are golden and crispy.
In a small bowl, whisk together the peanut butter, minced ginger, minced garlic, soy sauce, lime juice, and a pinch of red chili flakes. If the sauce is too thick, add a couple of teaspoons of warm water to reach the desired consistency.
In a large bowl, combine the cooked noodles, sautéed tofu, sliced red bell pepper, julienned carrot, and chopped green onion.
Drizzle the peanut-ginger sauce over the noodle mixture and toss to coat evenly.
Finish by lightly drizzling with olive oil and sprinkling toasted sesame seeds on top.
Serve immediately and enjoy the blend of creamy, tangy, and spicy flavors.
