Herbs (Rosemary & Thyme) to taste

PREPARATION
Peel and dice the sweet potato into small cubes for even cooking.
Dice the red bell pepper and thinly slice the yellow onion.
Heat the olive oil in a large skillet over medium heat and sauté the onion and red bell pepper until softened, about 3-4 minutes.
Add the ground turkey to the skillet, breaking it up with a spatula. Season with salt, pepper, and your fresh herbs (rosemary and thyme). Cook until the turkey is browned and cooked through, approximately 6-8 minutes.
