This dish is enhanced with a delicate crunch from a light almond flour coating and aromatic fresh herbs, making each bite a balance of textures and flavors.
INGREDIENTS
4 oz Chicken Breast
1 Large Egg
1/4 Avocado
1/2 cup Cherry Tomatoes
1 cup Baby Spinach
2 tbsp Almond Flour
1 tsp Olive Oil
2 tbsp Fresh Herbs (Basil & Parsley)
PREPARATION
Pat the chicken breast dry and season lightly with salt, pepper, and a portion of the chopped fresh herbs.
Dredge the chicken in almond flour to create a light coating.
Heat olive oil in a non-stick skillet over medium heat and add the chicken. Cook for about 4-5 minutes on each side until the exterior is crispy and the interior reaches an internal temperature of 165°F.
While the chicken cooks, hard-boil the egg by placing it in simmering water for 9-10 minutes. Then cool under running water and peel.
Assemble the dish by placing baby spinach as a base, followed by sliced or diced avocado and halved cherry tomatoes.
Slice the hard-boiled egg and crispy chicken, then arrange them on top of the greens.
Garnish with the remaining fresh herbs for a burst of flavor and serve immediately.
