7 oz Shrimp
1 cup Cauliflower Rice
1 tbsp Extra Virgin Olive Oil (for shrimp)
1 tbsp Extra Virgin Olive Oil (for rice)
2 cloves Garlic
2 tbsp Lemon Juice
2 tbsp Fresh Parsley
1 medium Red Bell Pepper
Salt and Pepper to taste
PREPARATION
Pat the shrimp dry with paper towels and season lightly with salt and pepper.
Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat.
Add minced garlic and sauté for about 30 seconds until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Squeeze half of the lemon juice over the shrimp during the last minute of cooking.
In a separate pan, heat the remaining tablespoon of olive oil over medium heat.
Add the cauliflower rice and finely diced red bell pepper; sauté for about 4-5 minutes until the rice is tender.
