1.5 cups Fresh Spinach (45g)
1 teaspoon Olive Oil
1 small Onion (70g)
Salt & Pepper, to taste
PREPARATION
Peel and dice the sweet potato into small cubes for even cooking.
Finely chop the small onion and red bell pepper.
Heat the olive oil in a large nonstick skillet over medium heat. Add the diced sweet potato and onion, cooking for about 5-7 minutes until they begin to soften.
