PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Rice the cauliflower by pulsing in a food processor until fine. Transfer the cauliflower rice to a microwave-safe bowl and microwave on high for 4-5 minutes until softened. Allow to cool slightly and then wrap in a clean towel and squeeze out excess moisture.
In a bowl, combine the cauliflower, eggs, minced garlic, and a pinch of salt and pepper. Mix well until the ingredients are fully incorporated.
Press the cauliflower mixture onto the prepared baking sheet to form a thin, even crust. Bake in the preheated oven for 15-20 minutes or until the edges begin to turn golden and the crust feels firm.
Remove the crust from the oven and spread a thin layer of tomato sauce evenly over it. Sprinkle the mozzarella cheese on top.
Return the pizza to the oven and bake for an additional 8-10 minutes, or until the cheese has melted and the toppings are warmed through.
