INGREDIENTS
6 oz Salmon Fillet
1 medium Red Bell Pepper
1 cup Broccoli
1 cup Zucchini
1 tsp Olive Oil
1 tbsp Lemon Juice
2 tbsp Fresh Herbs (Dill & Parsley)
PREPARATION
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the salmon fillet on the baking sheet. Drizzle a small amount of lemon juice over it and sprinkle with half of the chopped fresh herbs, salt, and pepper.
In a bowl, combine chopped red bell pepper, broccoli florets, and sliced zucchini. Drizzle with olive oil, season with salt and pepper, and toss to coat evenly.
Spread the vegetables around the salmon on the baking sheet.
Place the baking sheet in the oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender and slightly charred.
Remove from the oven, garnish with the remaining fresh herbs and an extra squeeze of lemon juice if desired, and serve immediately.
