INGREDIENTS
6 oz Lean Sirloin Steak
1 cup Broccoli
1 cup Red Bell Pepper
1/2 cup Zucchini
2 cloves Garlic
2 tablespoons Fresh Herbs (Rosemary & Thyme)
2 teaspoons Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F for the roasted vegetables.
In a bowl, toss broccoli, red bell pepper, and zucchini with olive oil, a pinch of salt and pepper, and half of the minced garlic. Spread evenly on a baking sheet.
Roast the vegetables in the preheated oven for about 15-20 minutes or until they are tender and lightly charred.
While the vegetables roast, pat the steak dry with paper towels and season both sides with salt, pepper, and the remaining minced garlic along with the fresh herbs.
Heat a skillet over medium-high heat until very hot. Sear the steak for about 3-4 minutes on each side for medium-rare, adjusting cooking times to your preferred doneness.
Once seared, let the steak rest for 5 minutes before slicing.
Plate the sliced steak alongside the roasted vegetables and garnish with a drizzle of any remaining herb oil if desired.
