INGREDIENTS
5 oz Salmon Fillet
1 cup Broccoli (chopped)
1 medium Red Bell Pepper (sliced)
1 cup Sugar Snap Peas
1 tsp Fresh Ginger (grated)
2 tsp Honey
1 tsp Low-Sodium Soy Sauce
1 tsp Sesame Oil
1 tsp Sesame Seeds
PREPARATION
Preheat a non-stick skillet over medium-high heat.
In a small bowl, whisk together grated ginger, honey, and low-sodium soy sauce to create the glaze.
Pat the salmon dry with paper towels, then brush generously with half of the glaze on both sides.
Place the salmon in the skillet, skin-side down if applicable, and cook for about 3-4 minutes until a nice crust forms.
Flip the salmon and cook for another 3-4 minutes, then brush with the remaining glaze in the last minute of cooking. Remove the salmon from the skillet.
In the same skillet, add sesame oil and toss in the broccoli, red bell pepper, and sugar snap peas. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
Sprinkle with sesame seeds and give a quick toss to combine.
Plate the salmon alongside the stir-fried vegetables and serve immediately.
