0.67 cup Kimchi (~100g)
200g Firm Tofu
2 Large Eggs
1 tsp Sesame Oil
1 tbsp Soy Sauce
2 cloves Garlic, minced
PREPARATION
Heat a non-stick skillet over medium heat and add the sesame oil.
Add minced garlic to the skillet and sauté until fragrant, about 30 seconds.
Crumble the firm tofu into the skillet and stir-fry for about 4-5 minutes until lightly golden.
Add the cauliflower rice to the skillet and stir-fry for an additional 3 minutes, allowing it to get a bit crispy.
Mix in the kimchi and soy sauce, stirring all the ingredients well for 2 minutes.
Push the stir-fry to the side of the skillet and crack the eggs into the empty space. Scramble the eggs until just set, then combine with the rest of the ingredients.
