PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Break the cauliflower into florets and pulse in a food processor until it reaches a rice-like consistency. Transfer the cauliflower to a microwave-safe bowl.
Microwave the cauliflower for about 5-6 minutes until softened. Allow it to cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible.
