Enjoy a savory twist on a classic twice baked sweet potato, loaded with crispy bacon, melted cheddar cheese, and a whole egg for extra richness. This dish offers a delightful blend of textures and flavors, creating a satisfying meal that’s perfect for breakfast, lunch, or dinner.
INGREDIENTS
1 medium Sweet Potato
3 slices Bacon
1/2 cup shredded Cheddar Cheese
1 large Egg
2 tbsp chopped Green Onion
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Pierce the sweet potato with a fork and bake it on a foil-lined baking sheet for about 45 minutes or until tender.
While the sweet potato bakes, cook the bacon in a skillet over medium heat until crispy. Remove, drain on paper towels, and chop into small pieces.
Once the sweet potato is cool enough to handle, cut it in half lengthwise and carefully scoop out most of the flesh into a bowl, leaving a thin shell.
Mash the scooped sweet potato flesh, then stir in the chopped bacon, shredded cheddar cheese, and the egg. Season with salt and pepper.
Spoon the mixture back into the sweet potato shells, mounding it slightly.
Return the stuffed sweet potatoes to the oven and bake for an additional 12-15 minutes until the filling is heated through and the cheese has melted.
Garnish with chopped green onions before serving.
