INGREDIENTS
5 oz Chicken Breast (142g)
2 cups Romaine Lettuce (94g)
1 serving Chickpeas (50g)
2 tbsp Light Caesar Dressing (30g)
1 tbsp Parmesan Cheese (5g)
1 tbsp Mixed Fresh Herbs
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat the grill to medium-high heat.
In a small bowl, combine the mixed fresh herbs, olive oil, salt, and pepper to create a marinade.
Coat the chicken breast with the herb marinade evenly on both sides.
Grill the chicken for about 6-7 minutes per side until fully cooked and juices run clear.
While the chicken is grilling, rinse and pat dry the chickpeas. Toss them lightly with salt, pepper, and a drizzle of olive oil, then roast in a preheated 400°F oven for about 15-20 minutes or until crisp.
Chop the romaine lettuce and arrange it in a serving bowl.
Slice the grilled chicken into strips and add to the lettuce.
Top with the crispy roasted chickpeas, drizzle the light Caesar dressing over the salad, and finish with a sprinkle of parmesan cheese.
Toss gently to combine all flavors and serve immediately.
