PREPARATION
Preheat your oven to 400°F (200°C).
Trim and halve the artichokes, and remove any tough outer leaves. Rinse them thoroughly.
Press the tofu between paper towels to remove excess moisture, then cut it into bite-sized cubes.
In a large bowl, combine the artichoke halves, cannellini beans, and tofu. Add the minced garlic and fresh mixed herbs.
Drizzle olive oil and lemon juice over the mixture, and toss gently to coat evenly. Season with a pinch of salt and pepper, if desired.
Spread the mixture evenly on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the artichokes are tender and the tofu edges are slightly golden.
