300g Extra Firm Tofu
80g Shelled Edamame
1 cup Broccoli Florets
1 small Red Bell Pepper
0.5 cup Snap Peas
1 tsp Sesame Oil
1.5 tbsp Low-Sodium Soy Sauce
1 tbsp Rice Vinegar
1 clove Garlic, minced
1 tsp Fresh Ginger, minced
1 tsp Toasted Sesame Seeds
1 Scallion, sliced
PREPARATION
Press the tofu for at least 15 minutes to remove excess water, then cut into 1-inch cubes.
In a bowl, toss the tofu cubes lightly with a pinch of salt and a drizzle of sesame oil.
Heat a non-stick skillet over medium-high heat and add the tofu. Cook until all sides are golden and crispy, about 6-8 minutes. Remove tofu from skillet and set aside.
In the same skillet, add a little more sesame oil, then sauté minced garlic and ginger for about 30 seconds until fragrant.
Add broccoli, red bell pepper, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
Return the crispy tofu to the pan along with the shelled edamame. Pour in low-sodium soy sauce and rice vinegar, stirring gently to coat all ingredients.
