1 tbsp Balsamic Vinegar
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Trim and halve the Brussels sprouts. Cut the extra-firm tofu into 1-inch cubes, and drain the chickpeas.
In a large bowl, gently toss the Brussels sprouts, tofu cubes, and chickpeas with olive oil and a pinch of salt and pepper.
Spread the mixture evenly on a baking sheet lined with parchment paper. Roast for 20 minutes, stirring halfway through to ensure even crisping.
In a small bowl, whisk together the honey and balsamic vinegar.
