250g Extra Firm Tofu
1 cup Cooked Quinoa
1/2 cup Chickpeas
1 cup Baby Spinach
1/2 cup Cucumber, diced
1/2 cup Cherry Tomatoes, halved
1 tbsp Olive Oil
1 tsp Smoked Paprika
1 tsp Garlic Powder
Salt and Pepper to taste
PREPARATION
Press the tofu for at least 15 minutes to remove excess water and then cut it into cubes.
In a bowl, toss the tofu cubes with smoked paprika, garlic powder, salt, and pepper.
Heat olive oil in a non-stick pan over medium-high heat. Add the tofu and sear on all sides until crispy and golden, about 8-10 minutes.
While the tofu cooks, prepare the quinoa according to package directions if not already cooked.
Lightly rinse the chickpeas and pat dry. Optionally, warm them in the pan with tofu for extra flavor.
