INGREDIENTS
5 oz Flank Steak
1 medium Whole Wheat Tortilla
1/2 cup Red Bell Pepper
1/4 cup Red Onion
1/4 cup Low-Fat Cheddar Cheese
1 tbsp Lime Juice
Spices (Chili Powder, Cumin, Salt & Pepper) to taste
PREPARATION
In a bowl, combine the lime juice, chili powder, cumin, salt, and pepper. Marinate the flank steak in the mixture for at least 15 minutes.
Preheat a grill or skillet over medium-high heat and cook the steak for about 3-4 minutes per side for medium-rare, or adjust cooking time to your desired doneness. Once cooked, let it rest for a few minutes before slicing thinly.
In the same skillet, add a light spray of cooking oil and quickly sauté the red bell pepper and red onion until just softened, about 2-3 minutes.
Place the whole wheat tortilla on a clean surface, layer with the sliced steak, sautéed vegetables, and sprinkle the low-fat cheddar cheese evenly on top.
Fold the tortilla in half and return it to the skillet on medium heat. Cook each side for 2-3 minutes until the tortilla is lightly crisp and the cheese has melted.
Remove from the skillet, slice into wedges, and serve warm.
