Crispy Baked Chicken Parmesan with Fresh Herbs
Enjoy a lighter twist on the classic Chicken Parmesan. Tender, lean chicken breast is coated in a crunchy mixture of breadcrumbs and egg, then baked to crispy perfection. Topped with a modest spread of tangy marinara and melted part-skim mozzarella, it’s finished with a generous scattering of fresh basil and parsley for a burst of herbal freshness.
INGREDIENTS
6 oz Chicken Breast
1/4 cup Panko Breadcrumbs
1 large Egg, beaten
1 oz Part-Skim Mozzarella Cheese
1/4 cup Marinara Sauce
1 tbsp Fresh Basil, chopped
1 tbsp Fresh Parsley, chopped
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Pound the chicken breast lightly to even thickness and season with salt and pepper.
In a shallow bowl, beat the egg until smooth. In another bowl, place the panko breadcrumbs.
Dip the chicken breast first into the beaten egg and then coat evenly with the panko breadcrumbs.
Place the breaded chicken on the prepared baking sheet and bake for 20-25 minutes or until the chicken is cooked through and the coating is golden and crispy.
Remove the chicken from the oven. Spoon the marinara sauce evenly over the top of the chicken and sprinkle the mozzarella cheese on top.
Return the chicken to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Garnish with chopped fresh basil and parsley before serving.
