Enjoy a fresh twist on the classic Caesar with herb-grilled chicken served over crisp romaine lettuce, with crunchy, roasted chickpea croutons and a light Caesar dressing. This dish brings a balance of savory herbs and zesty lemon for a mouthwatering experience.
INGREDIENTS
4 oz Chicken Breast
2 cups Romaine Lettuce
1/2 cup Chickpeas
1 tbsp Light Caesar Dressing
1 tbsp Parmesan Cheese
2 tbsp Fresh Herbs (Rosemary, Thyme)
1 tbsp Lemon Juice
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat the grill to medium-high heat.
In a small bowl, mix the fresh herbs, lemon juice, olive oil, salt, and pepper to create a marinade.
Coat the chicken breast with the herb marinade and let it sit for about 10-15 minutes.
While the chicken marinates, drain and pat dry the chickpeas. Toss them with a pinch of salt, pepper, and a little extra olive oil.
Grill the chicken for about 6-7 minutes per side or until fully cooked and has nice grill marks.
Meanwhile, roast the chickpeas in a preheated oven at 400°F for 15-20 minutes until crispy, shaking the pan halfway through.
Chop the romaine lettuce and place it in a serving bowl. Slice the grilled chicken and add it on top.
Sprinkle the crispy chickpeas and Parmesan cheese over the salad, then drizzle with the light Caesar dressing.
Toss gently and serve immediately.
