INGREDIENTS
3 cups Fresh Spinach (90g)
1/4 cup Crumbled Feta Cheese (38g)
2 Whole Eggs
3 Egg Whites
2 Phyllo Dough Sheets (30g)
1/2 tbsp Olive Oil (7g)
1/4 medium Onion, chopped (30g)
1 tbsp Fresh Dill, chopped
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F (190°C) and lightly grease a small baking dish.
In a non-stick pan, heat olive oil over medium heat and sauté the chopped onion until soft and translucent.
Add the fresh spinach to the pan and cook until wilted, then stir in the chopped dill, salt, and pepper.
In a bowl, whisk together the whole eggs and egg whites until well combined. Gently fold in the cooked spinach mixture and crumbled feta cheese.
Lay one phyllo sheet in the greased dish, brushing lightly with olive oil. Place the second sheet on top and brush with a bit more oil.
Pour the spinach, egg, and feta mixture evenly over the phyllo base.
Bake in the preheated oven for 20-25 minutes, or until the filling is set and the phyllo is crisp and golden.
Remove from oven and let cool slightly before slicing into portions. Serve warm.
