INGREDIENTS
200g Tempeh
100g Red Bell Pepper
100g Broccoli
50g Carrot
1 tbsp Maple Syrup
1 tsp Olive Oil
1 Garlic Clove (minced)
Salt & Pepper to taste
PREPARATION
Press the tempeh lightly to remove excess moisture and cut it into bite-sized cubes or strips.
In a small bowl, whisk together the maple syrup and minced garlic. Add a pinch of salt and pepper.
Toss the tempeh in the maple glaze ensuring all pieces are well coated.
Heat a non-stick skillet over medium heat. Add the glazed tempeh and sauté for about 4-5 minutes on each side until golden and slightly crispy. Remove the tempeh and set aside.
In the same skillet, add the olive oil and then the red bell pepper, broccoli, and carrot. Stir-fry the vegetables over medium-high heat until they become crispy yet tender, about 3-4 minutes.
Return the tempeh to the skillet, toss with the vegetables for an additional minute to reheat and combine the flavors.
Serve immediately, garnishing with extra cracked black pepper if desired.
