Enjoy a vibrant dish of crispy marinated tempeh paired with an assortment of stir-fried vegetables. The rich flavors of ginger, garlic, and toasted sesame seeds complement the nutty tempeh, making this a satisfying meal that’s both hearty and clean.
INGREDIENTS
150g Tempeh
100g Broccoli
75g Bell Pepper
50g Snap Peas
30g Red Onion
1 tsp Sesame Oil
5g Fresh Ginger
1 clove Garlic
1 tbsp Low-Sodium Soy Sauce
1 tbsp Sesame Seeds
PREPARATION
Press tempeh gently with paper towels and cut into bite-sized cubes.
In a bowl, combine low-sodium soy sauce, grated fresh ginger, minced garlic, and sesame oil to create a marinade.
Toss the tempeh cubes in the marinade and let sit for 10-15 minutes.
Heat a non-stick skillet over medium-high heat and add the marinated tempeh. Sauté until golden and slightly crispy on all sides, about 6-8 minutes.
In a separate large pan or wok, add a splash of water or a tiny drizzle of sesame oil and heat over medium-high heat. Add chopped broccoli, sliced bell pepper, snap peas, and thinly sliced red onion.
Stir-fry the vegetables for 4-5 minutes until tender-crisp, retaining their vibrant colors.
Combine the cooked tempeh with the vegetables, sprinkle sesame seeds over the top, and toss gently to mix the flavors.
Serve warm as a satisfying meal suitable for breakfast, lunch, or dinner.
