150g Baby Potatoes

1 tbsp Fresh Parsley
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Wash the baby potatoes and halve them if they are larger. Toss the potatoes in a bowl with olive oil, a pinch of salt, pepper, and a couple of rosemary and thyme sprigs.
Spread the potatoes on a baking sheet and roast for 20-25 minutes until golden and tender.
