INGREDIENTS
1/3 cup dry Basmati Rice
4 ounces Chicken Breast
1 medium Lemon
2 tbsp Fresh Parsley, chopped
2 tbsp Fresh Mint, chopped
1 clove Garlic
1/4 cup chopped Onion
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Rinse the basmati rice under cold water until the water runs clear. Set aside.
Season the 4-ounce chicken breast with salt and pepper. Grill on medium-high heat until fully cooked, about 6-7 minutes per side. Once done, let it rest and then slice into strips.
In a medium saucepan, heat 1 teaspoon of olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent and fragrant, about 3-4 minutes.
Add the rinsed rice to the saucepan and toast for 1-2 minutes, stirring occasionally.
Pour in 2/3 cup of water or low-sodium chicken broth, bring to a boil, then reduce heat to low, cover, and simmer until the rice is tender and liquid is absorbed, about 15 minutes.
Once the rice is cooked, fluff it with a fork and stir in the juice of one lemon, chopped parsley, and mint.
Plate the rice pilaf and top with the grilled chicken slices. Adjust seasoning with salt and pepper as desired, and serve warm.
