Citrus-Garlic Shrimp with Zucchini Noodles
Enjoy a light, refreshing dish featuring succulent shrimp infused with zesty citrus and aromatic garlic, served over a bed of fresh, spiralized zucchini noodles. This dish is bursting with vibrant flavors and perfect for a balanced meal any time of the day.
INGREDIENTS
6 oz Shrimp, raw (~170g)
1 medium Zucchini (~196g)
1 tsp Extra Virgin Olive Oil (~5g)
2 cloves Garlic (~6g)
1 tbsp Lemon Juice (~15g)
Salt and Black Pepper to taste
PREPARATION
Start by spiralizing the zucchini to create noodles. If you don't have a spiralizer, use a vegetable peeler to create thin strips.
Pat the shrimp dry with paper towels and season lightly with salt and black pepper.
In a large non-stick skillet over medium heat, warm the extra virgin olive oil.
Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.
Add the shrimp to the skillet and cook for 2-3 minutes per side until they turn pink and are just cooked through.
Squeeze the lemon juice over the shrimp and toss to coat evenly.
Remove the shrimp from the skillet and set aside. In the same skillet, lightly warm the zucchini noodles for about 1-2 minutes, just until they are tender but still retain a bit of crunch.
Plate the zucchini noodles, then top with the citrus-garlic shrimp. Garnish with additional black pepper if desired, and serve immediately.
