Crispy Sweet Potato Hash with Turkey Sausage
This vibrant hash blends the natural sweetness of roasted sweet potatoes with savory turkey sausage and delicate egg whites. Enhanced with crisp bell peppers and a hint of onion, it offers a hearty bite with a satisfying crunch. A light drizzle of olive oil elevates the flavors while keeping the dish clean and balanced.
INGREDIENTS
4 oz Turkey Sausage
4 large Egg Whites
1 medium Sweet Potato
1/2 cup chopped Red Bell Pepper
1/4 cup chopped Yellow Onion
1 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Peel and dice the sweet potato into small, even cubes. Rinse and dice the red bell pepper and chop the yellow onion.
Slice the turkey sausage into rounds.
Heat a non-stick skillet over medium heat and add the teaspoon of olive oil. Once the oil is warm, add the diced sweet potato. Cook for about 5 minutes, stirring occasionally until the potatoes begin to soften.
Add the chopped red bell pepper and yellow onion to the skillet and continue to sauté until all vegetables are tender and edges begin to crisp, around 4-5 minutes.
Push the vegetables to one side of the skillet and add the turkey sausage slices. Sauté for about 3-4 minutes until the sausage begins to brown.
Lower the heat to medium-low and pour in the egg whites evenly over the mixture. Let them set slightly on the bottom, then gently stir to combine with the vegetables and sausage. Cook until the egg whites are just set, about 2-3 minutes.
Season with salt and pepper to taste, mix well, and serve hot.
