Enjoy a vibrant and light tilapia dish, perfectly seared with a citrusy lemon-herb marinade and finished with a luscious garlic butter sauce. This dish is accented by a burst of cherry tomatoes sautéed to bring a pop of color and freshness that complements the tender fish.
INGREDIENTS
6 oz Tilapia Fillet
1 tsp Olive Oil (for searing)
1 tbsp Butter
1 clove Garlic, minced
1/2 medium Lemon (zest and juice)
2 tbsp Fresh Parsley, chopped
1/2 cup Cherry Tomatoes
1 tsp Olive Oil (for tomatoes)
Salt & Pepper to taste
PREPARATION
Pat the tilapia fillet dry with paper towels. Season both sides lightly with salt, pepper, and a pinch of lemon zest.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the tilapia in the skillet and sear for about 3-4 minutes on each side, until the fish becomes opaque and easily flakes with a fork.
In a small pan, melt the butter over low heat. Add minced garlic and sauté for about 30 seconds until fragrant; then stir in the juice of half a lemon.
Drizzle the garlic butter sauce over the seared tilapia, and sprinkle freshly chopped parsley on top.
In another pan, heat 1 teaspoon of olive oil over medium heat and quickly sauté the cherry tomatoes for 1-2 minutes, just until they start to blister.
Plate the tilapia with a side of cherry tomatoes, and serve immediately with an extra squeeze of lemon if desired.
