INGREDIENTS
30g Rolled Oats
10g Almonds
10g Walnuts
15g Pumpkin Seeds
15g Sunflower Seeds
5g Chia Seeds
25g Pea Protein Powder
10g Maple Syrup
2g Coconut Oil
1 teaspoon Cinnamon
Pinch of Salt
PREPARATION
Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
In a large bowl, combine the rolled oats, chopped almonds, walnuts, pumpkin seeds, sunflower seeds, and chia seeds.
Add the pea protein powder, cinnamon, and a pinch of salt to the dry ingredients and mix well.
In a small saucepan over low heat, gently warm the maple syrup and coconut oil until they can easily be combined. Pour the warm mixture over the dry ingredients.
Stir everything together until evenly coated.
Spread the mixture in an even layer on the prepared baking sheet.
Bake for 20-25 minutes, stirring halfway through, until the granola is golden and toasted. Keep an eye on it to prevent burning.
Remove from the oven and let cool completely; the granola will crisp up further as it cools.
Store in an airtight container and enjoy as a snack or with your favorite milk or yogurt.
