1 medium Carrot (61g)
1 tbsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Maple Syrup
1 tsp Rice Vinegar
1 clove Garlic
1 tsp Fresh Ginger
1 tsp Sesame Seeds
PREPARATION
Press the tofu to remove excess moisture and cut it into 1-inch cubes.
Heat a non-stick skillet over medium-high heat and add half the sesame oil. Once hot, add the tofu cubes and sauté until all sides are golden and crispy. Remove tofu from the pan and set aside.
In the same skillet, add the remaining sesame oil. Sauté minced garlic and grated ginger for about 30 seconds until fragrant.
Add broccoli florets, sliced red bell pepper, and carrot slices to the skillet. Stir-fry for 3-4 minutes until the vegetables begin to soften but still retain crunch.
