1 cup Spinach (approx. 30g)
1 teaspoon Olive Oil
Salt & Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Dice the bell pepper and roughly chop the spinach.
Heat the olive oil in a non-stick skillet over medium heat. Add the diced sweet potato and cook for about 5 minutes, stirring occasionally.
Add the bell pepper to the skillet and continue cooking until both the sweet potato and bell pepper are tender, about 3-4 minutes.
Slice the turkey sausage into rounds and add to the skillet. Sauté for an additional 2 minutes until heated through.
