PREPARATION
Preheat your oven to 400°F. Thoroughly wash the baby potatoes and cut them in halves if they are large enough.
Toss the baby potatoes with a drizzle of olive oil, salt, pepper, and a sprig of rosemary and thyme. Spread them evenly on a baking sheet.
Roast the potatoes in the preheated oven for about 20-25 minutes until golden and tender.
