PREPARATION
In a blender, combine the whole egg, egg whites, almond flour, whey protein powder, half a banana (peeled) and water. Blend until the batter is smooth and well combined.
Transfer the batter to a bowl and let it rest for 5 minutes to slightly thicken. If the batter is too thick, add a splash more water.
Heat a non-stick skillet over medium heat. Lightly coat the skillet with a cooking spray or a tiny drizzle of oil.
Pour approximately 1/4 cup of batter into the pan, swirling to evenly spread the mixture into a thin crepe.
Cook for about 1-2 minutes until the edges set and the bottom is lightly golden, then gently flip and cook for another 1 minute. Remove and set aside.
Repeat with the remaining batter to form 2-3 crepes depending on pan size.
