Spiced Sweet Potato Hash with Crispy Eggs
A hearty yet light dish featuring tender sweet potato cubes sautéed with red bell pepper and onions, spiced with a touch of paprika and cumin, then topped with perfectly crispy eggs and savory turkey sausage. This medley brings a delightful balance of sweet, smoky, and savory flavors in every bite.
INGREDIENTS
1 small Sweet Potato (150g)
1 medium Red Bell Pepper (100g)
1/2 medium Yellow Onion (50g)
2 large Eggs
3 ounces Turkey Sausage (85g)
1 teaspoon Olive Oil
1 teaspoon Paprika & Cumin mix
Salt & Pepper to taste
PREPARATION
Peel and dice the sweet potato into small cubes. Dice the red bell pepper and chop the half onion.
Heat the olive oil in a large skillet over medium heat. Add the sweet potato cubes and cook for about 5 minutes.
Stir in the red bell pepper, onion, and the paprika and cumin mixture. Season with salt and pepper. Continue to sauté until the sweet potato is tender and the vegetables are slightly charred, about 7-8 minutes.
While the hash is cooking, in a separate pan, cook the turkey sausage slices over medium heat until lightly browned, about 4-5 minutes.
In the same pan or another lightly oiled pan, fry the eggs to achieve crispy edges while keeping the yolks runny, about 3-4 minutes.
Plate the sweet potato hash, top with the cooked turkey sausage, and finish by placing the crispy eggs atop the hash. Serve immediately.
