Enjoy this vibrant stir-fry where crispy extra firm tofu meets a colorful medley of red bell pepper and broccoli, tossed in a savory sesame glaze with a hint of ginger and garlic. The addition of shelled edamame not only elevates the protein content but also adds a satisfying crunch, while a sprinkle of toasted sesame seeds brings everything together in a delicious, nutrient-packed dish.
INGREDIENTS
300 grams Extra Firm Tofu
1 cup Shelled Edamame
1 medium Red Bell Pepper
1 cup Broccoli Florets
1 teaspoon Sesame Oil
1 tablespoon Low Sodium Soy Sauce
2 cloves Garlic
1 teaspoon Fresh Ginger
1 teaspoon Sesame Seeds
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut into bite-sized cubes.
In a bowl, toss the tofu cubes with a small drizzle of sesame oil and a pinch of salt.
Heat a non-stick skillet over medium-high heat. Add the tofu and cook until each side is golden and crispy, about 3-4 minutes per side. Remove tofu from the skillet and set aside.
In the same skillet, add the minced garlic, grated ginger, and a little more sesame oil if needed. Sauté until fragrant, about 30 seconds.
Add the sliced red bell pepper and broccoli florets to the skillet, stir-frying for 3-4 minutes until they begin to soften but still retain crunch.
Pour in the low sodium soy sauce and add the shelled edamame. Toss the vegetables to coat in the sauce and heat through, about 2 minutes.
Return the crispy tofu to the skillet, stirring gently to combine all ingredients and allow the flavors to meld.
Finish by sprinkling the sesame seeds over the stir-fry. Serve immediately and enjoy!
