1 cup Broccoli Florets (90g)
1/2 cup Red Bell Pepper (75g)
1 tbsp White Sesame Seeds
1 tbsp Low-Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Honey
2 cloves Fresh Garlic, minced
1 tsp Fresh Ginger, grated
1 tsp Sesame Oil
PREPARATION
Press the tofu for at least 15 minutes to remove excess water. Then cut it into bite-sized cubes.
In a small bowl, whisk together the low-sodium soy sauce, rice vinegar, honey, minced garlic, grated ginger, and sesame oil to create the glaze.
Lightly coat the tofu cubes with a dusting of sesame seeds. In a non-stick pan over medium-high heat, add the tofu and stir-fry until all sides are golden and crispy, about 6-8 minutes.
Remove the tofu from the pan and set aside. In the same pan, add broccoli florets, red bell pepper, and shelled edamame. Stir-fry the vegetables for about 3-4 minutes until they are just tender but still crisp.
Return the crispy tofu to the pan and pour the prepared glaze over the stir-fry. Toss everything well to ensure an even coating and heat through, about 2 more minutes.
