INGREDIENTS
5 oz Salmon Fillet
1 cup Baby Potatoes (150g)
2 cloves Garlic
2 tbsp Fresh Parsley
1 tsp Fresh Thyme
1 tsp Lemon Zest
2 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat the oven to 400°F (200°C).
Line a baking sheet with parchment paper.
In a small bowl, mix together the chopped fresh parsley, fresh thyme, lemon zest, a pinch of salt, and pepper.
Brush the salmon fillet with 1 tsp of olive oil and press the herb mixture onto the top of the salmon to form a crust.
Cut the baby potatoes in half and toss them in a bowl with 2 crushed garlic cloves, the remaining 1 tsp of olive oil, salt, and pepper.
Spread the seasoned potatoes onto the baking sheet and place the salmon fillet on one side.
Bake in the preheated oven for about 15-18 minutes, or until the salmon flakes easily with a fork and the potatoes are tender and golden.
Remove from the oven, plate the salmon alongside the roasted garlic baby potatoes, and serve warm.
