PREPARATION
Preheat your oven to 350°F (175°C) and line a small baking dish with parchment paper.
Pierce the sweet potato several times with a fork and microwave on high until soft (about 5-7 minutes), or bake it in the oven until tender. Allow to cool slightly, then peel and mash in a bowl.
