INGREDIENTS
6 oz Shrimp (approx. 170g)
1 cup Cauliflower Rice (approx. 107g)
2 tsp Olive Oil (approx. 9g each)
2 Garlic cloves
1 Lemon
0.5 oz Slivered Almonds (approx. 14g)
2 tbsp Fresh Parsley
Salt and Pepper to taste
PREPARATION
Pat the shrimp dry and season lightly with salt and pepper.
Heat 1 tsp of olive oil in a skillet over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
Add the shrimp to the skillet and sear for 2 minutes on each side, or until they turn pink and opaque. Squeeze half of the lemon juice over the shrimp during the cooking process.
In a separate pan, heat the remaining 1 tsp olive oil over medium heat. Add the cauliflower rice and a pinch of salt. Sauté for about 3-4 minutes until tender but still slightly crisp.
Remove the cauliflower rice from heat and toss in the chopped fresh parsley and a bit of lemon zest.
Plate a serving of herb cauliflower rice, top with the seared shrimp, and sprinkle the slivered almonds over for added crunch. Serve with the remaining lemon wedges on the side.
