INGREDIENTS
250g Extra-Firm Tofu
1/2 cup Shelled Edamame (75g)
1/2 cup Green Peas (80g)
1 cup Broccoli (91g)
1/2 cup Red Bell Pepper (75g)
1 medium Carrot (61g)
1 tbsp Sesame Seeds (9g)
1 tbsp Low-Sodium Soy Sauce (15g)
1 tsp Rice Vinegar (5g)
1 tsp Honey (7g)
1 tsp Sesame Oil (5g)
1 clove Garlic (3g)
1 tsp Ginger (2g)
1 tbsp Cornstarch (8g)
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut into 1-inch cubes.
In a bowl, gently toss the tofu cubes with cornstarch until evenly coated.
Heat sesame oil in a large non-stick skillet or wok over medium-high heat. Add the tofu and cook until all sides are crispy and golden, about 6-8 minutes. Remove tofu and set aside.
In the same skillet, add minced garlic, grated ginger, and prepare a quick sauce by stirring together low-sodium soy sauce, rice vinegar, and honey.
Add broccoli, red bell pepper, carrot slices, shelled edamame, and green peas to the skillet. Stir-fry the vegetables for about 3-4 minutes until they are tender-crisp.
Return the crispy tofu to the skillet. Pour the sesame glaze sauce over the mixture and toss to combine.
Sprinkle sesame seeds over the stir-fry, then cook for an additional minute to meld the flavors.
Serve hot as a balanced meal that delights with its crispy textures and vibrant flavors.
