400g Firm Tofu
150g Broccoli
1 tbsp Sesame Seeds
1 tbsp Fresh Ginger (grated)

1.5 tbsp Low Sodium Soy Sauce
1 tsp Rice Vinegar
1 tsp Maple Syrup
1 tbsp Cornstarch
2 tsp Olive Oil
Salt and Pepper to taste
PREPARATION
Press the tofu to remove excess moisture. Once pressed, cut the tofu into bite-size cubes.
Preheat your oven to 425°F. Toss broccoli florets with 1 tsp olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20 minutes until the edges begin to crisp.
In a bowl, combine low sodium soy sauce, rice vinegar, maple syrup, minced garlic, grated ginger, cornstarch, and the remaining 1 tsp olive oil. Mix well until the cornstarch is fully dissolved.
Lightly toss the tofu cubes in a bit of salt and pepper. In a non-stick skillet over medium-high heat, cook the tofu until all sides become golden and crispy, about 8-10 minutes.
