INGREDIENTS
5 ounces Top Sirloin Steak
150 grams Baby Potatoes
1 teaspoon Unsalted Butter
1/2 teaspoon Olive Oil
1 Garlic Clove
1 tablespoon Fresh Herbs (Rosemary & Thyme)
PREPARATION
Preheat the oven to 425°F. Toss the baby potatoes with olive oil, a pinch of salt, and half of the chopped fresh herbs on a baking sheet.
Roast the potatoes in the preheated oven for 20-25 minutes until tender and lightly crispy.
While the potatoes roast, pat the steak dry and season both sides with salt and pepper.
Heat a skillet over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes per side for medium-rare, or adjust to your desired doneness.
In the last minute of cooking, add butter, minced garlic, and the remaining herbs to the pan and spoon the herb-garlic butter over the steak.
Remove the steak from the skillet and let it rest for 5 minutes. Slice if desired and serve alongside the roasted baby potatoes.
