1 medium Sweet Potato (150g)
3 ounces Turkey Sausage (85g)
1 medium Red Bell Pepper (60g)
1/4 medium Onion (25g)
1 cup Spinach (30g)
1 teaspoon Olive Oil (5g)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F for roasting the sweet potato.
Peel (if desired) and dice the sweet potato into small cubes. Toss with a little olive oil, salt, and pepper, and spread on a baking sheet. Roast for about 20 minutes until tender and slightly crispy.
While the sweet potato roasts, dice the red bell pepper and quarter the onion. Sauté them in a non-stick skillet with the teaspoon of olive oil over medium heat for about 3-4 minutes until softened.
