150g Baby Potatoes
1 tbsp Unsalted Butter (14g)
1 Garlic Clove

2 tbsp Fresh Herbs (Parsley & Rosemary)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Wash the baby potatoes and halve them. Toss with olive oil, salt, pepper, and half of the fresh herbs.
Spread the potatoes on a baking sheet and roast in the preheated oven for 20-25 minutes or until crisp on the edges and tender inside.
While the potatoes roast, pat the sirloin steak dry with paper towels. Season both sides generously with salt and pepper.
Heat a skillet over medium-high heat until it’s very hot. Sear the steak for about 2-3 minutes on each side for medium-rare, adjusting time based on thickness.
Reduce the heat to medium-low. Add the butter to the pan along with the minced garlic and remaining herbs. Spoon the melted herb-garlic butter over the steak continuously for about 1 minute.
Remove the steak from the skillet and let it rest for 5 minutes before slicing.
