200g Potato (white)
150g Nonfat Greek Yogurt
100g Low-fat Cottage Cheese
1 tsp Olive Oil
1 head Roasted Garlic
1 tbsp Fresh Parsley

PREPARATION
Preheat your oven to 400°F. Slice the top off a head of garlic, drizzle with a bit of olive oil, wrap in foil, and roast for about 35-40 minutes until soft and caramelized.
Meanwhile, chop the cauliflower into florets and peel and cube the potato. Boil both in lightly salted water until tender, approximately 15-20 minutes.
Drain the vegetables and return them to the pot. Squeeze the roasted garlic cloves out of their skins and add to the cauliflower and potato.
